Maddy’s Thai Noodle Salad

Maddy made this salad the night before our picnic and it tasted fresh and perfect. It travels very well, which makes it ideal for a picnic or pot luck.

You’ll Need:

Egg or rice noodles,cooked

Vegetables, such as cucumber and yellow peppers, chopped or sliced thinly

Cooked prawns or shrimp

For Garnish:

handful of raw peanuts

Sliced green onions

Lime, cut in wedges

Dressing:

3 T peanut butter

2 T Soy sauce

3 T vinegar (any)

1 T oil

1 tsp chili powder

1 T green onion

1 tsp garlic

water

1. Blend all the salad dressing ingredients in a blender and add a bit of warm water if it seems too thick (should be fairly runny).

2. Mix together the cooked noodles, vegetables and prawns.

3. Pour the dressing over the noodle mixture.

4. Garnish with some whole peanuts, lime wedges and sliced green onions.
