JENNIFER’S PEAR AND GINGER CRUMBLE

I have never had a pear crumble until Jennifer made this one. The candied ginger makes it incredibly delicious and unlike any crumble or crisp I have ever had. I love the way all of the flavours meld together.

You’ll need:

7 green pears (in other words, not yellow pears. Something flavourful, not mealy), peeled, cored and chopped into 1” cubes

1 cup candied ginger, sliced

pinch of dried ginger

small box of apple juice

1 Tbs brown sugar

pinch of salt

1 cup brown sugar

Juice of a lemon

½ cup chopped butter

1 cup rolled oats

1 cup flour

pinch of cinnamon

  1. Pre-heat oven to 350° F.
  2. Mix together pears, ginger apple juice, lemon juice, salt and 1 Tbs brown sugar. Put into baking dish.
  3. Mix together rolled oats, flour, 1 cup brown sugar, butter and cinnamon. Sprinkle over top of fruit mixture.
  4. Cook for 1 ½ hours. Check often, just to make sure it doesn’t burn.
